A very nice piece, lots of character. Completely handmade from 1/8 inch thick circular saw steel (8670 tool steel), recycled from a North Idaho lumber mill. The steel is very similar to our mothers dark colored kitchen knives that cut so well. This one is a little shorter than my regular camp/chefs and does not come with leather sheath.
- A pleasure to use. As a past restaurant owner, I know how important it is to have a tool that makes daily chores easier. A fine convex edge, great for slicing and dicing vegetables and meat.
- You can spend a little less on a Henckels or Wusthof but this knife will feel better in your hand and be much easier to keep sharp. A couple passes on the strop every week or two, takes about 10 seconds to keep it hair shaving sharp. See my sharpening instructions on the " Knife Care" page. The sharpening strop comes with the knife.
- The handle is stabilized box elder burl, a rare piece with red liners and copper pins.
- Over all length 10.5 inches. Blade is 2.25 inches wide. Cutting edge is 5.75 inches. My touchmark is on the blade.
